Chicken Salad Wraps are a great way to use up leftover rotisserie chicken. They also make for the perfect healthy, satisfying, and easy lunch.
Butter lettuce makes for the perfect vessel for our leftover rotisserie chicken salad with craisins, pecans, chopped red onion, celery, and apples.
The best part about this recipe is you can add in your chicken salad favorites. Switch out apples for grapes. Make a golden mayo dressing by adding in some turmeric or curry powder (uh, yum!). Add in fresh herbs like dill. Heck, you might even be able to get away with adding croutons on top for a real spin on a salad. I might be getting carried away now...

What Makes These Chicken Salad Wraps so Good?
- Leftover Rotisserie chicken. You can't get any easier or cheaper than this. I prefer to make mine homemade and use the next day, skin and all.
- Butter lettuce. You can opt for romaine or Boston bib if you can't find butter lettuce, but it's my favorite in this recipe.
- Chopped Celery. Adds a fresh crunch.
- Chopped Red Onion. (optional, but adds a ton of flavor) If you can't eat raw onions, you could use pickled red onions instead which adds a nice fermented tang all while being much less pungent.
- Chopped pecans or walnuts. Super delicious and the extra fiber, fats, protein, and carbs helps make the salad more filling.
- Craisins. A personal favorite of mine.
- Chopped apple.
- Freshly-squeezed lemon juice. Helps keep the apple from browning and adds a bright flavor.
How to Make Chicken Salad Wraps:
- To a large bowl; add leftover rotisserie chicken, diced celery and onion, chopped nuts, and craisins.
- In a small bowl, combine mayo and the juice of ½ of a lemon until smooth.
- Pour mayo dressing over top of the chicken salad mixture and stir until combined. Salt and pepper to taste. (You may need to double the dressing if the salad still looks dry)
- Dice apple, and then add to a small serving bowl. Toss with the juice of the remaining ½ of the lemon. Tip: If serving this only once, you can add the apple & lemon juice right in with the chicken salad mixture.
- Finally, assemble lettuce wraps by topping lettuce leaves with chicken salad mixture, and then top with apples.
- Enjoy!

Ingredients
- 1 large head butter lettuce washed and patted dry (You may need 2 heads of lettuce if feeding a lot of people. 1 lettuce leaf = 1 wrap)
- 4-5 cups leftover rotisserie chicken shredded or cubed
- 1 gala apple *Keep separate and cut fresh at each serving to prevent browning
- 1 stalk celery diced
- ¼ cup craisins
- ¼ cup pecans or walnuts chopped
- 2 tablespoon red onion optional
- 4 tablespoon mayo
- 1 lemon (½ juiced for the dressing, ½ juiced for the apples)
- salt and pepper to taste
Instructions
- To a large bowl; add leftover rotisserie chicken, diced celery and onion, chopped nuts, and craisins.
