What is Aioli?
You know, the funny thing is I asked myself this question too. Well, I did some research and learned that an aioli is traditionally made with an emulsion of garlic and olive oil, and it's popular in the Mediterranean cuisine. Coincidentally, this Americanized recipe (along with the majority you'll find online) doesn't even fit the definition of aioli, as there is no emulsion of garlic and olive oil happening here.
Regardless, this recipe is super tasty and easy to make. When I find the time, I'm going to set out to develop a more proper chipotle aioli recipe. But until then, ignorance is bliss. Amiright?
What makes this Chipotle Aioli Recipe so delicious?
You only need five ingredients to make this sauce, which is one of the reasons I love this recipe. Store-bought aiolis can contain cheaper and (let's face it) unnecessary ingredients such as soybean oil, modified food starch, natural flavor, added sugar, and preservatives such as sodium benzoate and potassium sorbate.
Another wonderful thing about making this sauce homemade is you can adjust the heat to your liking. Some store-bought sauces are way too spicy, and some not spicy enough. Simply add as many or as little peppers as you want. Tip: I recommend starting out with less, as you can always add more heat in but you can't take it out. There was one recipe online that used the whole can of chipotle chilis, and if I'd done that, my family and I would be running to the nearest faucet to drown ourselves in.

Ingredients for this Chipotle Aioli Recipe:
- Chipotle peppers in adobo sauce (6 oz. can, but only use 1-2 peppers, then taste and adjust)
- Mayo
- Freshly-squeezed lime juice
- Onion powder
- Minced garlic
- Salt
Optional Additions: You can also add in a little bit of cumin (about ⅛ tsp) for a slightly more intense flavor. Also, if you're feeling fancy or have it on hand, you can add in some chopped cilantro or garnish it with it. I'd recommend somewhere in-between a teaspoon and tablespoon.

How to make my Chipotle Aioli Recipe:
- Add all ingredients to a food processor or high-speed blender; 1-2 chipotle peppers in adobo sauce, mayo, lime juice, onion powder, minced garlic, and salt.

- Blend until nice and smooth, about 2-3 minutes.
- Taste test. If it's not spicy enough, add another pepper. Scrape down the sides and then blend. Repeat until the sauce is to your liking.

- Refrigerate until ready to use. Optional: Make this sauce one day in advance and let the flavors deepen overnight.
- Serve with burgers, fries, onion rings, tacos, or fritters, etc.

Store the leftover sauce in an airtight container or mason jar in the refrigerator. Use within 3-4 days. Note: The sauce tends to get spicier as it sits.
