Cream cheese and grated mild cheddar are whipped together with a touch of sour cream until perfectly smooth. Dill, chives, and chopped scallions (green onion) are added in for a refreshing flavor (and gorgeous color!). Then, the cheese ball is finished off by being rolled in chopped pecans. Serve it with crackers, and call it a day.
1teaspoonchives(I used freeze dried, you can do up to 1 tbsp. fresh)
1teaspoondill(I used freeze dried, you can do up to 1 tbsp. fresh)
1cupchopped pecans
a dash or two of black pepper
Instructions
In a large bowl or bowl of a stand mixer, add the softened cream cheese, grated cheddar cheese, sour cream, and black pepper.
Blend until smooth; about 1-2 minutes.
Fold in the chives, dill, and chopped green onion until well-combined.
Refrigerate in a bowl for one hour. *I place plastic wrap on the surface of the cheese mixture to prevent any drying out.
After the cheese mixture has been refrigerated for one hour; place a large square of plastic wrap on the counter. Scoop out the cheese mixture and place it in the center of the plastic wrap. Gather the sides of the plastic wrap around the cheese mixture and shape it into a ball. Once satisfied with the shape, carefully peel the plastic wrap off of the cheese ball.
Add chopped pecans to a large plate and set the cheese ball down on top of it. Roll the cheese ball in the chopped pecans, lightly pressing, until the sides are completely coated.
Serve with crackers.
Notes
*Keep this cheese ball refrigerated, covered in plastic wrap, until ready to be served. You can make this recipe 1-3 days ahead of time.
