These waffles are like a cross between Belgian waffles (though these do NOT have the signature ingredients like yeast or pearl sugar) and your classic freezer waffle. They're fluffy and soft on the inside, and golden and crispy on the outside. Pure vanilla extract gives them that tantalizing Belgian smell and taste, without all of the fuss.
In a medium-sized mixing bowl, add the gluten-free flour, baking powder, and salt. Whisk until well-combined.

In a large mixing bowl, add the eggs, half & half, oil, granulated sugar, and pure vanilla extract. Whisk until smooth.

Add the dry ingredients into the wet, stirring until smooth. Tip: It's okay if there's some lumps in the batter. It should be nice and thick, slightly thicker than pancake batter.
Grease your waffle maker with oil using a basting brush. Meanwhile, allow the batter to rest while the waffle maker heats up.
Once the waffle maker is ready, use a 2-tbsp cookie scoop to measure out one waffle. Scoop the batter into the center of the bottom mold of the waffle maker.
Close the waffle maker, and cook until the waffle maker signals it's ready, or until the waffle reaches your desired color. Using the DASH mini waffle maker, it took about 2 minutes per waffle.
Remove the waffle from the waffle maker with a silicone spatula.
Repeat until all of the batter has been used up.
Serve with butter, maple syrup, and fresh fruit. No one's judging if you add some whipped cream. ;)
Notes
You can store Gluten Free Waffles in an airtight container or gallon bag in the refrigerator for up to three days, or in the freezer for up to three months.To reheat: Remove the desired amount of waffles from the freezer and toast them until hot and crispy, either in a toaster, toaster oven, or oven. Top with your favorite waffle toppings.*Waffles made with half&half will yield a thicker, easier to handle batter as compared to waffles made with milk. If the batter is too thin, try adding in 1-2 tablespoon more flour.
