These Chicken Salad Lettuce Wraps use leftover rotisserie chicken and butter lettuce to make a super easy, healthy, and satisfying lunch. A great way to amp up your chicken salad game, or switch it up.
1large head butter lettucewashed and patted dry (You may need 2 heads of lettuce if feeding a lot of people. 1 lettuce leaf = 1 wrap)
4-5cupsleftover rotisserie chickenshredded or cubed
1gala apple*Keep separate and cut fresh at each serving to prevent browning
1stalkcelerydiced
¼cupcraisins
¼cuppecans or walnutschopped
2tablespoonred onionoptional
4tablespoonmayo
1lemon(½ juiced for the dressing, ½ juiced for the apples)
salt and pepper to taste
Instructions
To a large bowl; add leftover rotisserie chicken, diced celery and onion, chopped nuts, and craisins.
In a small bowl, combine mayo and the juice of ½ of a lemon until smooth.
Pour mayo dressing overtop of the chicken salad mixture and stir until combined. Salt and pepper to taste. (You may need to double the dressing if the salad still looks dry)
Dice apple, and add to a small serving bowl. Toss with the juice of the remaining ½ of the lemon. Tip: If serving this only once, you can add the apple & lemon juice right in with the chicken salad mixture.
Assemble lettuce wraps by topping lettuce leaves with chicken salad mixture, and then top with apples.

Notes
*If you don't like or can't find butter lettuce, you can also use romaine or Boston bib.*If you are cooking chicken for this recipe (not using leftover rotisserie chicken) then you will want to season the chicken generously with your favorite spices. Some spices to try would be curry powder, turmeric, or rotisserie chicken seasoning.
