This five ingredient creamy, cool dipping sauce is balanced with just the right amount of heat and hint of lime. Pair it with burgers, fries, onion rings, tacos, or fritters like my Gluten Free Corn Fritters.
1cupmayouse avocado mayo or vegan mayo for a healthier option
6oz.can chipotle peppers in adobo sauce*Important: Do not use the whole can at once. I recommend starting with 1-2 peppers, blending, then taste testing. You can add more peppers from there. You can always add more heat in, but you can't take heat out.
freshly-squeezed juice of half a lime
1teaspoonminced garlicor 1 clove
ΒΌteaspoononion powder
β teaspoonsalt
Instructions
Add all ingredients to a food processor or high-speed blender; 1-2 chipotle peppers in adobo sauce, mayo, lime juice, onion powder, minced garlic, and salt.
Blend until nice and smooth, about 2-3 minutes.
Taste test. If it's not spicy enough, add in another pepper. Scrape down the sides and then blend. Repeat until the sauce is to your liking.
Refrigerate until ready to use. Optional: Make this sauce one day in advance and let the flavors deepen overnight.
Serve with burgers, fries, onion rings, tacos, or fritters, etc.
Notes
Store the leftover sauce in an airtight container or mason jar in the refrigerator. Use within 3-4 days. Note: The sauce tends to get spicier as it sits.
Optional Additions: You can also add in a little bit of cumin (about β tsp) for a slightly more intense flavor. Also, if you're feeling fancy or have it on hand, you can add in some chopped cilantro or garnish it with it. I'd recommend somewhere in-between a teaspoon and tablespoon.
