For the Honey Glaze:
½cuphoney
⅓cupwarm water or apple juice
1 ½teaspoonapple cider vinegar
¼teaspooncayenne pepper
½teaspoonsalt
Instructions
In a small bowl, combine paprika, ground sage or dried sage leaves (if using), salt, and pepper. Drizzle the pork chops with 1 tablespoon cooking oil and equal amounts of the spice mixture. Rub the seasoning and oil into both sides of the pork chops. Set aside.
.Heat a cast iron skillet or frying pan with 1 tablespoon of cooking oil over medium-high heat.Meanwhile, in a medium-sized bowl, add all of the ingredients for the Honey Glaze and stir to combine. Set aside.
Once the pan is hot, add 1 tablespoon of butter. Sear the pork chops on each side until golden brown, about 3 to 4 minutes per side. The pork chop should release from the pan once it's ready to be flipped. If it's not releasing, give it another minute or so. If using thicker than 1-inch pork chops, you may want to check the internal temperature of the pork chops. If still lower than 130, you may want to place them in the oven for a few minutes.
Turn the heat down to medium-low, push the pork chops to one side of the skillet, and add in the remaining butter. Add the minced garlic and saute for 10-30 seconds or until golden brown. Immediately add in the Honey Glaze and stir. Allow the glaze to simmer and reduce into a thicker syrupy consistency, about 3 to 5 minutes. Frequently spoon the glaze over the pork chops. The glaze should become amber-brown and syrupy when ready.
Turn off the heat once the glaze is syrupy and the internal temperature of the pork chops read 145 F. Sprinkle over the fresh chopped parsley if using.
Serve.
Notes
To reheat pork chops: Steer clear of the microwave, it will suck every last bit of moisture out of the pork chops and make them dry. It's best to cover pork chops with foil and heat them in the oven at 350 F. Allow to warm through for 8-10 minutes.
